    Vegan Friendly! Chopped Salad w/ Iceberg & Radicchio

    Get a little bit of everything in one bite in this Vegan Friendly Chopped Salad recipe. Made with radicchio, tomatoes, cucumber, pepperoncini, and much more, there’s so much to love about this crowd-pleasing salad!

    Chop, toss, and serve!

    This is one of my favorite salads. It’s the ultimate party salad because you always end up with a huge portion, and there are so many different elements! The layers of flavor and variety of elements are perfect for when you’re looking to please a crowd.

    Every bite of this salad is super crisp and refreshing, and it's vegan friendly! I'm not vegan, but as a party host, it's super important to me that my vegan friends always have something delish when they are at my home, so this salad is perfection for a big pizza night party!

    Customize it any way you want, my buttermilk ranch is a fun swap for the vinaigrette, and serve it for brunch next to my mushroom pizza! There’s never a bad time for chopped salad!

    You're going to find lots of chopped salad recipes with lots of variations. My recipe has the classics (iceberg ahead!), so let's go over some of my fun additions!

    • Radicchio
      • I originally tested this recipe with just the iceberg, but it was missing something. So I chopped up half a head of radicchio and it added the little bitter bite I wanted.
      • If you've never tried radicchio, I highly recommend giving it a go in this recipe. It adds another dimension of flavor that just kicks this recipe to another level!
    • Radishes
      • Not always in a chopped salad, but it's definitely a fun addition! I always add little diced radishes to my salads for the crunch and they do their job here.
      • Just make sure to chop or dice them pretty small so you get a piece in every bite.

    Let's make this veggie-packed salad!

    Step 1: You'll want to make the salad dressing first!

    Step 2: Chop all those veggies up!

    Pro Tip!

    • I like to chop all the veggies up to about the same size and pretty small! It will help you get a little bit of goodness in each bite!

    Step 3: Get all those veggies into a big bowl, big enough so you have plenty of room to toss it.

    Step 4: Add some of that dressing and toss your gorgeous salad!

    Ingredients

    Dijon Vinaigrette

    • 2 tablespoon lemon juice
    • 1 tablespoon dijon mustard
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • ⅓ cup extra virgin olive oil

    Salad

    • 1 head iceberg lettuce chopped
    • 1 small head radicchio chopped
    • 1 cup chopped tomatoes
    • 1 cup chopped persian cucumbers
    • ½ cup chopped radishes
    • ½ cup chopped celery
    • ½ cup chopped bell pepper
    • ¼ cup chopped black olives
    • ¼ cup chopped pepperoncini
    • 3 tablespoons finely chopped red onion

    Instructions

    Dijon Vinegrette

    • Combine all ingredients except the olive oil in a medium bowl.
    • Slowly whisk in the olive oil. Season with more salt and pepper to taste.

    Salad

    • Pour about ⅓ cup of the salad dressing into a large bowl.
    • Add the salad ingredinets into the bowl and toss to coat in the dressing.
    • Season the salad with additional salt and pepper to taste and serve immedietly!
