    Tender cooked mushrooms are the star of the show

    Uncooked mushrooms on a pizza? No thank you! We’re taking mushroom pizza up a notch with this Mushroom Pizza with Shallots and Garlic. It’s an incredibly satisfying vegetarian pizza that mushroom lovers will devour.

    Mushrooms can be a fickle pizza ingredient. If they’re added raw, their texture is weird and all of their moisture is released onto the pizza. However, if they’re cooked beforehand with fat and flavor-boosters, mushrooms become a meaty, rich, and irresistible topping.

    Go all out on pizza night by making homemade dough and my super easy no-cook pizza sauce! It doesn’t get much better than that!

    Ingredients!

    This pizza gets all of its richness and depth from a handful of simple ingredients:

    Pizza dough

    Every great pizza begins with fresh dough. Go all out with your own homemade pizza dough or save some time and buy it from a store instead. Homemade dough is my preferred choice because it’s so easy to make and can be frozen for months at a time.

    Butter and oil

    You need both to cook the mushrooms. Unsalted butter adds flavor and olive oil prevents the butter from burning. They are a classic duo!

    Mushrooms

    A blend of oyster mushrooms and cremini mushrooms are my favorite on pizza. If you can, try to get your hands on oyster mushrooms. These delicate and savory mushrooms are common all over the world. Once cooked, they become so meaty and the perfect pairing for herbs, cheese, and aromatics.

    No oyster mushrooms in sight? No problem. Use only cremini mushrooms instead or pair them with sliced portobellos.

    Boost the flavor!

    The other stars of this mushroom lover’s pizza are the shallots, parsley, and garlic. The parsley and garlic are sauteed in the pan with the mushrooms to bring out their flavor while the shallots are sliced and added fresh. All three work together to add brightness and extra fresh flavors that help break through the rich mushrooms and cheese.

    Pizza sauce 

    My no-cook pizza sauce recipe is easy to make in just 5 minutes. It’s the best option here or you can use storebought pizza sauce if you can’t spare a second.

    Mozzarella cheese

    When you’re out searching for ingredients, make sure you pick up a block of whole milk low moisture mozzarella. This is the best cheese for pizza. When you shred it yourself, full fat mozzarella bubbles, melts beautifully, and stretches with every bite.

    If you can, stay away from pre-shredded mozzarella. It’s made with anti-caking agents, which prevent the shreds from sticking together in the bag but negatively affect its melting capabilities under heat.

    How to make mushroom pizza

    These step-by-step instructions will show you how:​​

    Step 2: Cook them until they are this deep golden color. Looking gorgeous!

    Step 4: Bake until the cheese is bubbly and the dough is browned!

    Tips and tricks

    There are a few things you should know before you cook a mushroom lover’s pizza:

    Make the pizza ahead of time

    The pizza dough, sauce, and mushrooms can all be made up to 3 days ahead of time. Keep them in separate containers in the fridge until it’s time to make the pizza.

    Use a pizza stone or baking steel

    A pizza stone is the best way to cook pizza at home because it retains heat so well and makes the crust extra crunchy. A baking steel is the next best option as it retains even more heat and speeds up the cooking time.

    Makes: 1 12-inch pizza

    Ingredients

    • 1 one-pound pizza dough
    • 1 tablespoon unsalted butter
    • 2 tablespoons olive oil
    • 4 ounces oyster mushrooms about 2 cups
    • 4 ounces cremini mushrooms thinly sliced (about 1 ½ cups)
    • ½ tsp. salt
    • ¼ cup finely chopped shallot about 1 large shallot
    • 3 cloves garlic minced
    • 3 tablespoons minced parsley
    • 6 ounces shredded mozzarella cheese about 2 cups
    • ⅓ cup sauce

    Garnish

    • freshly grated parmesan cheese and red pepper flakes

    Instructions

    • Preheat oven to 500 degrees Fahrenheit.
    • In a 12-inch skillet, melt butter and olive oil over high heat.
    • Add mushrooms and cook, stirring occasionally, until browned, about 8 minutes.
    • Remove from heat and stir in garlic, parsley, and salt.
    • Stretch pizza dough to a 12-inch round.
    • Evenly spread on the sauce, top with cheese, and then with the mushrooms and then the shallot.
    • Bake 12 minutes.
    • Top with parmesan cheese if desired, slice, and serve!
