Honestly, I’ve never been a fan of the PSL from Starbucks. I find it overly sweet and too fake-tasting. But I know that people LOOOOOVE it.
So when I started testing my pumpkin spice coffee syrup, I knew I needed to improve on the flavor and texture. And you know what… I effing did it!!! I made a silky smooth syrup that actually tastes like pumpkin pie. It’s so good that even I’ve been drinking during this cozy season.
I've put it in my coffee, in a little sparkling water and, while I haven't tried it, it could be a great swap for simple syrup in my easy cocktail recipes. And if you're a fan of delicious and interesting syrups, you'll want to check out my burnt sugar syrup for cocktails. It's also a winner.
It actually tastes like pumpkin pie!
You know I always want to bring you the best recipes that are well tested and easy to make, and this one hits the mark!
I actually bought a couple pumps of PSL syrup from Starbies and made three popular recipes that I found online to see what the hype was about. The Starbies version was so thick and absolutely disgusting. And the others were grainy and honestly, I thought they were just okay.

I did five rounds of recipe testing to find the best version.
Yes, my recipe is a little more involved than boiling some spices in simple syrup, but it is SO WORTH it, and still IMO. During my last test of the recipe, a few of my friends were over and one of them said that it tasted exactly like pumpkin pie. F-yeah! Mission complete!
Ingredient spotlight!
The ingredients are basic, but there are a couple of things to pay attention to!

- Spices
- I prefer to use individual spices vs a blend when cooking, but if you already have a pumpkin spice mix in your pantry, you can totally use it as a substitute. Start with 2 teaspoons and make adjustments so you like the flavor!
- Canned pumpkin
- You can use any brand of canned pumpkin puree (not pumpkin pie filling!) when making this, but if you want that gorgeous pale orange color, make sure to use Libby brand canned pumpkin puree!

Pro Tip!
- Make sure your spices aren’t old and expired! They lose their flavor when they are old and you want your syrup to bring all the pumpkin pie goodness!

Recipe
Silky Smooth! Pumpkin Spice Syrup for Coffee & More!
Equipment
- small saucepan
- paper coffee strainer
- fine mesh sieve
- silicone spatula
Ingredients
- 15 ounce can pumpkin puree Libby brand
- 1 ¾ cup sugar
- 1 ½ cup water
- 1 teaspoon vanilla extract
- 3 cinnamon sticks
- 6 cloves
- 1 ¼ teaspoon ground ginger
- ¾ teaspoon ground nutmeg freshly ground
- ¼ teaspoon allspice
- ¼ teaspoon salt
- Pinch pepper freshly ground
Instructions
- Stirring often cook pumpkin over medium-high heat in a small saucepan for 5 minutes, the puree will steam and bubble when not stirred at this point.
- Remove from heat and stir in the remaining ingredients.
- Return to medium-high heat. Cook until the mixture begins to steam and bubble around the edges, about 5 minutes giving it a couple stirs during the cooking.
- Reduce heat to low and simmer for 20 minutes, stirring occasionally.
- Strain through a fine mesh strainer lined with a coffee filter for 15 minutes. Gently squeeze any excess syrup from the coffee filter.
- Store in the refrigerator in an airtight container for up to two weeks and use it in your coffee, cocktails, or drizzeled over some ice cream!

Very interesting! I never got the whole pumpkin spice trend. I mean, it’s pretty much. Cinnamon! I bought a diffuser recently, pumpkin spiced, and it actually smelled like SQUASH!!! Terrible! Anyway, I like your syrup recipe.
