Double Mushroom Pizza w/ Red Sauce & Garlic

This Mushroom Pizza with Shallots and Garlic is SO GOOD! Made with two kinds of mushrooms and a handful of aromatics, the rich flavors are impossible to resist!

Ingredients

  • 1 one-pound pizza dough
  • 1 tablespoon unsalted butter
  • 2 tablespoons olive oil
  • 4 ounces oyster mushrooms about 2 cups
  • 4 ounces cremini mushrooms thinly sliced (about 1 ½ cups)
  • ¼ teaspoon kosher salt crystal diamond is my go to!
  • ¼ cup finely chopped shallot about 1 large shallot
  • 3 cloves garlic minced
  • 3 tablespoons minced parsley
  • 6 ounces shredded mozzarella cheese about 2 cups
  • cup sauce

Garnish

  • freshly grated parmesan cheese and red pepper flakes

Instructions

  • Preheat oven to 500 degrees Fahrenheit.
  • In a 12-inch skillet, melt butter and olive oil over medium-high heat.
  • Add mushrooms and cook, stirring occasionally, until browned, about 10 minutes.
  • Remove from heat and stir in garlic, parsley, and salt.
  • Stretch pizza dough to a 12-inch round.
  • Evenly spread on the sauce, top with cheese, and then with the mushrooms and then the shallot.
  • Bake 12 minutes.
  • Top with parmesan cheese if desired, slice, and serve!
