Here’s why I love this cranberry and brie crostini recipe. It’s easy. Really easy. The cranberry sauce is baked in the oven and topped on some crostini with a little brie. Yum!
The flavors are also killer. Rosemary, orange, and cranberry go so well together and the sauce is really balanced out with the mild creaminess of the brie. It’s pretty fantastic.
If you’re looking for a recipe that can be made ahead of time for a holiday party, this recipe is absolutely for you. I’ve got some tips that will help you with making the recipe ahead of time so you don’t have to stress when cooking for your next party!
LET’S TALK CRANBERRY AND BRIE CROSTINI INGREDIENTS
The most flavor-packed component of this easy appetizer really is the cranberry sauce. So let’s get into the details of the ingredients to make the oven-baked flavor-packed sauce along with some tips for purchasing brie and making some crostini!
The cranberry sauce is really the main flavor bomb of this recipe. To make it, you obviously need cranberries. I call for a 12-ounce bag of fresh berries. You can totally use frozen, but make sure you grab 12 ounces. The frozen bags of cranberries often come in different sizes.
For the rest of the sauce ingredients, there really isn’t anything too crazy to talk about. You’ll want to make sure to use freshly squeezed OJ and grate some fresh nutmeg as well. Using fresh stuff is the best way to go.
When it comes to brie for these easy appetizers, use your favorite! Tripple cream, double cream, it’s all good!
The main thing that you want to do with whichever brie you use, is to freeze it for 15 minutes before you slice into it. Freezing it for a short amount of time will help you slice the brie to fit the crostini.
Crispy little pieces of toast make the best way to get the brie and cranberry sauce into your mouth. The crunch just adds another layer of deliciousness in this recipe.

HOW TO MAKE CRANBERRY AND BRIE CROSTINI STEP-BY-STEP

Step 1: Make some crostini!
Step 2: Mix cranberries, sugars, orange zest/juice, rosemary, salt, and pepper together.
Step 3: Put all the cranberry sauce mixture into your favorite 9×13 baking dish.
Step 4: Bake the cranberries until the just burst…they should look something like this!

CRANBERRY AND BRIE CROSTINI APPETIZER TIPS
These tips should help you with making this simple holiday appetizer.
There are two things you can absolutely make ahead of time for these cranberry and brie crostini.
The first thing you can do is make the crostini. Crostini can be made up to one week before serving. So, if you’re having a party is on a Saturday, whip up a batch of crostini during the week to save you some time!
Secondly, the cranberry sauce can be made and refrigerated up to 3 days before serving. Just let it cool, transfer to an airtight container and when you’re ready to assemble the bites, give it a stir!
When you’re planning on making them, you can assemble them up to two hours before serving. Just, assemble, cover loosely and chill! I suggest pulling them out of the fridge for about 30 minutes or so before people arrive. That way they won’t be super cold.
THE BEST KNIFE FOR CROSTINI
In order to get super thin crostini when slicing your baguette, you really need to use a serrated knife. I love this one from Wusthof. It’s super sharp and cuts through bread super easily. I’ve been using it for about 5 years now and love it.
I highly recommend you pick one up if you don’t have a reliable serrated knife in your collection.

Cranberry Brie Crostini
- 1 baguette about 10 ounces
- 1/4 cup olive oil
- 1/2 teaspoon flake salt
- 12 ounces fresh cranberries
- 1/2 cup tightly packed dark brown sugar
- 2 tablespoons sugar
- 1/3 cup orange juice
- 2 teaspoons orange zest
- 1 teastpoon finely chopped rosemary
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 12 ounces brie cheese
- Optional: extra orange zest and rosemary
To Make Crostini
- Prheat oven to 350 degrees.
- Thinly slice the baguette about 1/4-inch thick. You’ll need at least 48 slices.
- Evenly place sliced bread on two baking sheets and lightly brush both sides with olive oil.
- Bake until golden, about 20 minutes.
- Season with salt and pepper and allow to cool before topping.
- Increase oven temp to 400 degrees.
- Mix cranberry sauce ingredients together in a medium bowl and trasfer to a 9×13 baking dish.
- Bake until the berries burst, about 20 minutes.
- Allow to cool completely, and chill until ready to serve.
- Slice brie into 48 slices and place on the crostini. Evenly divide cranberry sauce among brie topped crostini.
- Top with a little extra orange zest and rosemary and serve!
