    Where’s the beach?

    Light, refreshing, and sweet, this Frozen Pineapple Daiquiri will have you feeling all of the beach vibes in just a few sips. Made with frozen fruit, juice, and rum, you couldn’t ask for a better summer drink.

    I’m going to blow your mind and make pineapple your new go-to! With its vibrant and fresh flavors and the gorgeous pop of yellow, you’ll push the strawberries aside and only make your frozen rum cocktails with pineapple after trying this recipe.

    Dip your feet in the pool, top off your glass, and sip on this refreshing pineapple slush while you enjoy some great party snacks. It’s so delicious next to my Jalapeno Greek Yogurt Dip with tortilla chips and veggies. Talk about a burst of flavor!

    What's a daiquiri?

    The classic daiquiri, made with rum, lime juice, and simple syrup, comes from Cuba. It was invented in the 1800s and was beloved by famous novelist, Ernest Hemingway, as well as President John F. Kennedy. While this frozen version isn’t technically authentic, the light and citrusy flavors are still a nod to the classic.

    Frozen daiquiris are typically made with frozen fruit blended along with the original ingredients and some add-ins to boost the fruity flavors. I made mine with pineapple but they can also be blended with frozen strawberries, mango, passionfruit, watermelon, and more.

    Cool and refreshing, these frozen ingredients blend up easily to create the Cuban classic! You’ll love the fruity twist in these frozen pineapple cocktails:

    Frozen pineapple 

    Chunks of frozen pineapple will not only give your daiquiri a refreshing taste but will also turn it into a creamy and slushy treat with a smooth texture. You can either use storebought frozen pineapple chunks or buy a pineapple, cut it up, and freeze the chunks yourself.

    Light rum

    My go-to rum for this recipe is Havana Club. However, if it isn’t available where you live, there are plenty of other mid-priced light or white rums to choose from! 

    If you want to make a blender drink with rum but don’t have any light rum at home, feel free to replace it with any kind you already have. Both dark rum or flavored will be fine.

    Pineapple juice

    For added pineapple flavor! The juice also helps your daiquiri taste more sweet, fruity, and a lot less boozy. If you like your frozen cocktails on the stronger side, go ahead and use less juice or leave it out.

    In case you end up with too much leftover juice with no rum in sight, use it up in these Pineapple Gin Coolers. They’re just as refreshing and were made to be enjoyed under the summer sun.

    Lime juice

    Fresh citrus juice will always round out the flavors in cocktails without being too tart or sweet. If you don’t have a lime at home, go ahead and use bottled lime juice or lemon juice instead.

    Simple syrup

    A splash of simple syrup will give your cocktail a little sweetness and help tone down the tartness from the citrus and pineapple. Simple syrup is really easy to make at home - just heat equal parts sugar and water together until the sugar dissolves. Once it’s cool, use it in more summer cocktails, mocktails, or iced coffees.

    Ice

    Make sure it’s fresh! Fill your ice cube trays the night before making your daiquiris so they can taste their best.

    Salt

    A pinch of salt gives this cocktail balance and rounds out all of the flavors.

    How to make a blended pineapple daiquiri

    Frozen drinks with rum are easy to make when you’re using a high-powered blender (We love Vitamix!). Grab your daiquiri ingredients and you’ll be ready to sip in only a few simple steps:

    Step 1: Add all of the ingredients to a high-speed blender.

    Step 2: Blend until smooth, then enjoy!

    Can I make it ahead of time?

    Once it’s blended up, you can store the frozen rum cocktail in an airtight container in the freezer. The pre-made daiquiri should stay fresh for up to 1 month.

    Can I make it without alcohol?

    Of course! If you aren’t a fan of rum, just take it out entirely. Simply blend the rest of the ingredients along with an added 3 ounces of pineapple juice or water to turn this into a frozen pineapple non-alcoholic drink.
