A light and floral cocktail with plenty of fizz
The Elderflower Spritz puts a floral spin on the classic Italian spritz. Unlike an Aperol Spritz or Negroni Spritz, this version is ultra-light, effervescent, and has a refreshingly floral flavor. It just might be even more fun than a glass of wine!
It's also one of the best ways to use the bottle of St. Germain on your bar cart (aside from my French 77 Cocktail, of course). Mix it with the bubbly prosecco and club soda, this 3-ingredient cocktail transforms into a flowery, almost citrusy delight. It’s an easy sipper you can enjoy year-round.
It’s also my go-to when my friends come over for casual movie nights because it’s so much more exciting than the typical bottle of wine! I love serving any of my prosecco cocktails when friends pop by.
Still, you can make a batch for brunch, mix it up when you’re hanging out by the pool, or assemble it anytime you’re craving a fancy-looking cocktail with refreshing flavors.
Ingredients needed
You just need three things to make this killer sparkling cocktail!
Brut prosecco
When you’re out shopping, you'll notice that prosecco comes in three varieties of sweetness: brut, very dry, and dry. Brut is the least sweet option and the best choice for this elderflower cocktail. Sparkling wine that’s too sweet will overpower the cocktail and throw off the balanced flavors, which isn't any fun.
Can’t find brut prosecco? Make your spritz with rose sparkling wine, Cava, or champagne (so fancy!).
Elderflower liqueur
You can make this cocktail with any brand of elderflower liqueur you can find, but St. Germain is the most common!
Never had St. Germain? Oh, you are missing out!
It's is a light and floral liqueur from France made with up to 1,000 hand-picked elderflowers in each bottle, which blows my mind. The elderflowers are always harvested at their peak, leaving the liqueur with a floral, rose-like aroma and a refined flavor.
The only downfall? It doesn’t last forever. It’s made with zero preservatives and will darken over time, so you should get a new bottle every 6 months, but I've been known to push that time frame.
If you’re looking for more ways to use St. Germain, try adding half of an ounce to other sparkling or prosecco cocktails, gin and tonics, or with a little sparkling water!
Club soda
You can use any non-flavored club soda or sparkling water you already like. There’s nowhere to hide in this cocktail, so it’s important that you enjoy the taste of the brand you choose. If it’s off, you’ll notice!

How to make this deliciousness
Just like most spritz recipes, this easy summer cocktail comes together in a flash. No cocktail shaker or fancy methods here! Follow these step-by-step instructions to learn how it’s done:
Tips and tricks
Keep these tips in mind before putting your spritz together:
Seriously, use lots of ice
Keep cool with every sip by loading your wine glass with ice. Be generous - fill it right to the top to keep the drink ice-cold to the very end.
Remember: only use fresh ice you made the night before. The freezer-burnt cubes at the back of your freezer will affect the flavor of your drink as they melt... trust me, I'm an ice snob.
Pro Tip!
- Don’t over stir!
- Stirring the cocktail and ice together is important for dilution and proper mixing but you don’t want to overdo it. One to two swirls of the spoon is more than enough and won’t water down the drink.
Want to take the presentation up a notch? Add fresh lemon peel to the ice cube trays before filling them with water. This way, your drink will have an added freshness as the cubes melt.
Change it up...just a bit!
I don’t recommend straying too far from the original recipe, but there are a few variations you can make to put your own twist on this drink. Here are some ideas:
- For a boozier cocktail: Add up to 1 ounce of gin or vodka.
- Extra freshness: Pop a bundle of fresh mint leaves right into the glass.
- For sweetness: Prosecco already adds a bit of sweetness here but you can add a little more with a .5 ounce of simple syrup or a simple syrup infusion (like honey syrup).

We must be kindred spirits. I made this cocktail a couple of weeks ago after I tried St Germain for the first time. It’s my new favorite cocktail! I tried it with and without lemon and decided I like it better sans lemon. But either way you can’t go wrong.
