Easy Chocolate Coconut Clusters

Melt some chocolate, toss in some classic ingredients like coconut, corn flakes, and peanuts, and you get these scrumptious easy chocolate coconut clusters! This recipe is a super easy no-bake snack or dessert, all you need is a few minutes of prep time before these are ready to chill.

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 tablespoons refined coconut oil
  • 1 cup shredded sweetened coconut
  • 1 cup corn flakes
  • ½ cup roasted salted peanuts

Garnish

  • additional shredded sweetened coconut

Instructions

  • Place chocolate chips and coconut oil into a large microwave safe bowl.
    1 cup semi-sweet chocolate chips, 1 tablespoons refined coconut oil
  • Microwave the chocolate chips and coconut oil for 30 seconds and stir. Repeat mircrowaving at 30 second intervals until the chocolate has melted.
  • Stir the remaining ingredients into the melted chocolate and drop by teaspoonfuls onto wax or parchment paper. If you want, sprinkle with additional shreded coconut!

  • Refrigerate until firm, about 30 mins.
