Toast the waffles until golden brown and allow to cool completely.
If you like, evenly drizzle caramel sauce onto two of the waffles.
Place ½ cup of ice cream onto the center of one frozen waffle (ontop of the caramel sauce if usinng).
Top with a second waffle and press to form a sandwich and cut into four pieces. Immediately place on a parchment-lined baking sheet and freeze.
Repeat with remaining ingredients.
Freeze sandwiches until ice cream is hard, at least 1 hour.
Once sandwiches are frozen, combine the chocolate chips and coconut oil in a microwave-safe mug.
Melt the chocolate chips on medium power in 20 second intervals, stirring between intervals, until fully melted.
One at a time, dip the mini waffle sandwiches in the melted chocolate, allowing excess to drip off and place back into the freezer for at least 30 minutes. Freeze until ready to serve!
