Whisk flour, baking soda, and salt together in a medium bowl.
Whisk sugars and melted butter together in a large bowl.
Add egg and vanilla and whisk until uniform and thickened.
Using a silicone spatula stir flour into the sugar mixture until just mixed together.
Stir in chocolate chips,cover and chill for at least 1 hour.
Preheat oven to 350 degrees F. and line two baking sheets with parchment paper.
Scoop into 12 evenly sized balls, about 2 rounded tablespoons each, and evenly place on the parchment lined baking sheets.
Bake until the cookies have browned around the edges, 10 to 12 minutes.
Allow the cookies to cool completely, about 30 minutes, and transfer to the freezer until ready to assemble the ice cream sandwiches.
