Creamy Roasted Garlic White Bean Dip is a savory snack that comes together in only a few minutes.


You'll need: raw cashews, garlic cloves, olive oil, cannelloni beans, lemon juice, salt

Peel garlic and cut end off. Coat with olive oil, wrap and roast in the oven.

Add to a blender: cashews, water and olive oil. Blend until smooth.

Add the rest of the ingredients and blend until smooth.

Cover and chill for 1 hour.

Drizzle with olive oil and add garnishes.


You can bump up the flavor of the dip by stirring in finely chopped  fresh herbs. Rosemary, dill, parsley, oregano, or basil would all be  delicious.
