These restaurant-worthy Chicken Fajita Nachos are loaded with all kinds of good stuff, like seasoned chicken breasts, sauteed peppers and onions, and melted cheese. It’s the perfect party appetizer or fun dinner!
You'll need: chicken, tortilla chips, bell peppers, onions, lime juice, guacamole, garlic, cilantro, seasonings, Monterrey jack cheese and more.
Season chicken with lime juice, ½ teaspoon salt, chili powder, cumin, dried oregano and smoked paprika.
Saute chicken and add peppers and onions.
Set oven to broil and line a sheet pan with parchment paper. Spread chips in an even layer on the baking sheet. Evenly sprinkle with half of the cheese.
Top with the chicken fajita mixture and remaining cheese. Broil until the cheese is melty, bubbly, and browned around the edges, about 8 minutes.
Once the nachos are done top with guacamole, sour cream, and cilantro. Serve immediately.
You can prep the ingredients ahead of time. Cook any topping that need to be cooked, like the chicken and peppers in this recipe, grate the cheese, chop any toppings and store in the refrigerator until ready to make the nachos!
Cooking nachos in the microwave is a great solution if you’d rather serve individual portions or don’t want to turn on your oven.
