Chocolate Chip Cookie Ice Cream Sandwiches

Ingredients

Chocolate Chip Cookies

  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ cup tightly packed dark brown sugar
  • 2 tablespoons granulated sugar
  • ½ cup unsalted butter, melted and cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Assembly

  • 2 cups ice cream

Instructions

Chocolate Chip Cookies

  • Whisk flour, baking soda, and salt together in a medium bowl.
  • Whisk sugars and melted butter together in a large bowl.
  • Add egg and vanilla and whisk until uniform and thickened.
  • Using a silicone spatula stir flour into the sugar mixture until just mixed together.
  • Stir in chocolate chips,cover and chill for at least 1 hour.
  • Preheat oven to 350 degrees F. and line two baking sheets with parchment paper.
  • Scoop into 12 evenly sized balls, about 2 rounded tablespoons each, and evenly place on the parchment lined baking sheets.
  • Bake until the cookies have browned around the edges, 10 to 12 minutes.
  • Allow the cookies to cool completely, about 30 minutes, and transfer to the freezer until ready to assemble the ice cream sandwiches.

Assembly

  • If needed, take the ice cream out of the freezer until soft enough to scoop, about 10 minutes.
  • Place one cookie top side down and place a ⅓ cup scoop of ice cream on the cookie. Top with another cookie and gently press to form a sandwich.
  • Immediately place in the freezer on a parchment-lined baking sheet and repeat with remaining ingredients.
  • Freeze until ready to serve!
