VEGETARIAN NACHOS FOR TWO

Tortilla chips Pepper jack cheese Refried beans Salsa Green onion Sour cream Lime juice Avocado Cherry tomatoes Jalapenos Cilantro
INGREDIENTS
Set oven to broil, spread chips on baking sheet and set aside. Stir beans & salsa together in a small bowl.
Sprinkle half of the cheese onto the chips. Spoon the bean and salsa mixture on top of the first layer of cheese.
Top the nachos with the remaining cheese and green onions.
Broil until the cheese is melty & bubbly (around 10 minutes) While the nachos cook, stir sour cream & lime juice.
Once the nachos are done, drizzle them with the lime sour cream and top with avocado, tomatoes, and jalapenos. Enjoy while hot!
TOP TIPS
Try other toppings such as bell peppers, black olives, salsa verde, roasted corn or BBQ jackfruit.
If making a larger batch bake instead of broil so cheese melts on every level.
You can swap the refried beans for cooked black beans, pinto beans, lentils, or a combination.
