Chocolate Chip Cookie Ice Cream

Get the best of both worlds in this recipe for Chocolate Chip Cookie Ice Cream Sandwiches.

Ingredients

You'll need: flour, salt, brown sugar, baking soda, sugar, butter, vanilla, and chocolate chips.

Whisk flour, baking soda, and salt together in a medium bowl, then whisk sugars and melted butter together in a large bowl.

Add egg and vanilla and whisk until uniform and thickened.

Using a silicone spatula stir flour into the sugar mixture until just mixed together. Stir in chocolate chips, cover and chill for at least 1 hour.

Preheat oven to 350. Scoop into 12 evenly sized balls,  on the parchment lined baking sheets.

Bake until the cookies have browned around the edges, 10 to 12 minutes. Allow to cool 30 minutes.

Place one cookie top side down and place a  ⅓ cup scoop of ice cream on the cookie. Top with another cookie and  gently press to form a sandwich.

TOP TIPS

Make the cookie dough up to 24 hours before baking the cookies. Keep it covered in the bowl in the fridge.

Chocolate cookies freeze nicely for months when kept in a sealed bag or container.
